  • 2 cups chopped rotisserie chicken
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 apples, peeled and chopped
  • 1 white onion, diced
  • 4 tablespoons butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (15 oz each), drained
  • 2 cups shredded Mexican blend cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the apples and onion until softened (6-8 minutes). Stir in chili powder and cumin.
  2. Reduce heat to medium-low, melt butter in the same pot, then whisk in flour for about 60 seconds.
  3. Gradually add chicken broth while whisking until smooth. Whisk in half & half and simmer until thickened (3-5 minutes).
  4. Add the sautéed apple/onion mixture, chopped chicken, and cannellini beans; mix well.
  5. If too thick, stir in additional broth. Incorporate shredded cheese until melted.
  6. Serve warm with your choice of toppings such as cilantro or avocado.
