  • 4 cups assorted mushrooms (diced)
  • 1 cup white onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons vegan butter (or oil)
  • 56 cups vegetable broth
  • 14-ounce can coconut milk
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water and soak for 15–30 minutes.
  2. While soaking, prepare the vegetables: slice the mushrooms and dice the onions.
  3. In a large soup pot over medium heat, melt the vegan butter. Add onions and garlic; sauté until translucent.
  4. Stir in sliced mushrooms; cook until browned.
  5. Season with salt, pepper, and dried parsley.
  6. Add drained wild rice, vegetable broth (starting with 5 cups), and coconut milk; stir well.
  7. Bring to a boil, then reduce heat to low and simmer covered for 20 minutes.
  8. Remove lid and cook uncovered for another 15–20 minutes until rice is tender.
  9. Let sit for 5 minutes before serving.
