  • 185g icing sugar
  • 60g dairy-free softened butter
  • 4 tablespoons lemon juice
  • Zest of 1 large lemon
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon turmeric or 2 drops yellow food gel

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, cream together the dairy-free butter and icing sugar using a whisk or electric mixer until smooth.
  3. Add the lemon juice and zest, mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking powder, bicarbonate of soda, and turmeric (or food gel). Gradually add to the wet mixture until combined into a dough.
  5. Form small balls from the dough (about one tablespoon each) and roll them in additional icing sugar.
  6. Place on a lined baking sheet with enough space between each cookie. Bake for about 10-12 minutes or until they crack on top.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
