  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1 small can mushrooms (sliced)
  • 3.5 oz fresh spinach
  • 1 2/3 cups hummus
  • 68 lasagna noodles (regular or gluten-free)
  • 1 1/2 cups marinara sauce
  • 7 oz vegan cheese

Instructions

  1. Cook lasagna noodles in boiling salted water until al dente.
  2. In a baking dish, spread about 1/2 cup marinara sauce.
  3. Sauté diced onion, garlic, and mushrooms in oil until softened, then add spinach.
  4. Mix sautéed vegetables with hummus and season as desired.
  5. Spread filling onto cooked noodles and roll tightly.
  6. Place rolled noodles in the baking dish, cover with remaining marinara sauce and top with vegan cheese.
  7. Bake at 360°F for 20-25 minutes.
