  • ½ cup sugar
  • ¼ cup vegan butter
  • 2 tbsp vegan creamer
  • ¼ tsp salt
  • 1 tsp vanilla
  • ¾ cup brown sugar
  • 2 tbsp nondairy milk
  • 1 cup flour
  • ½ cup nondairy mini chocolate chips
  • 1820 chocolate sandwich cookies
  • 1 cup nondairy chocolate chips
  • ½ cup peanut butter

Instructions

  1. Line an 8×8 inch pan with parchment paper.
  2. In a bowl, mix sugar, vegan butter, vegan creamer, salt, and vanilla until smooth. Stir in brown sugar, nondairy milk, flour, salt, and mini chocolate chips until combined.
  3. Press half of the cookie dough mixture into the pan and layer with chocolate sandwich cookies.
  4. Melt nondairy chocolate chips with peanut butter until smooth; pour over the cookies.
  5. Crumble remaining cookie dough on top and press gently.
  6. Refrigerate for at least 2 hours before cutting into bars and serving.
