  • 2½ teaspoons instant dry yeast
  • ¼ cup sugar
  • ⅓ cup canola oil (or other plant-based oil)
  • 3⅓ cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup vegan butter
  • ½ cup brown sugar
  • 4 teaspoons cinnamon
  • ¾ cup powdered sugar (for glaze)
  • 1½ tablespoons dairy-free milk

Instructions

  1. Warm the almond milk until lukewarm. Sprinkle in yeast and 1 tablespoon of sugar; let sit for about 10 minutes until frothy.
  2. Add remaining sugar, canola oil, salt, and flour; mix until a dough forms.
  3. Knead on a floured surface for about 5–7 minutes until smooth.
  4. Place in a greased bowl covered with a damp cloth; let rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the dough, roll out into a rectangle, spread vegan butter, sprinkle cinnamon-sugar mixture.
  6. Roll tightly into a log shape, slice into 9 pieces, and place in a greased baking dish.
  7. Let rise for another 30 minutes while preheating the oven to 350°F (175°C). Bake for about 20 minutes until golden brown.
  8. Whisk together powdered sugar, dairy-free milk, and vanilla extract for glaze; drizzle over warm rolls.
