  • 3 cups + 1 heaping tablespoon gluten-free baking flour blend
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter or vegan butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking pan with nonstick spray.
  2. In a bowl, combine blueberries, raspberries, blackberries, 1/2 cup sugar, and a heaping tablespoon of flour. Stir gently and set aside.
  3. In a separate bowl, mix the remaining flour (3 cups), remaining sugar (1/2 cup), brown sugar, baking powder, cinnamon, and salt.
  4. Whisk together the egg and vanilla; drizzle over dry ingredients. Add cubed butter and mix until crumbly.
  5. Press more than half of the mixture into the prepared pan. Layer the berry mixture on top followed by clumps of the remaining crumble.
  6. Bake for 38-40 minutes until golden brown. Cool completely before cutting.
