  • 14 oz firm tofu
  • 2 tablespoon soy sauce
  • 1/2 tablespoon maple syrup
  • 1/4 cup coconut milk
  • 1/2 tablespoon sriracha
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/3 cup peanut butter (room temperature)
  • 1 teaspoon brown sugar
  • 1/2 tablespoon soy sauce
  • 2 teaspoons lime juice
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon ginger powder (or freshly grated ginger)
  • 1/3 cup warm water

Instructions

  1. Drain excess water from 14 oz firm tofu by pressing it between plates with a weight for 20 minutes.
  2. In a bowl, mix 2 tbsp soy sauce, 1/2 tbsp maple syrup, 1/4 cup coconut milk, 1/2 tbsp sriracha, 1/2 tsp garlic powder, and 1/2 tsp ginger powder.
  3. Preheat your oven to 400°F (200°C).
  4. Cut tofu into thick strips and marinate in the mixture for at least 20 minutes.
  5. Bake the marinated tofu on a tray for 10-12 minutes per side until golden brown.
  6. For the peanut sauce, mix 1/3 cup peanut butter, 1 tsp brown sugar, 1/2 tbsp soy sauce, 2 tsp lime juice, 1 tsp rice vinegar, and enough warm water to achieve desired consistency.
  7. Serve skewered tofu with peanut sauce.
