Thanksgiving Quesadillas are a fun and delicious way to reinvent your holiday leftovers.   • 1 8-ounce package shredded Monterey Jack cheese
  • ½ cup mayonnaise
  • 1 tablespoon chopped fresh sage
  • 4 10-inch flour tortillas
  • 1 pound leftover turkey (white or dark)
  • 12 ounces leftover stuffing
  • ½ cup whole berry cranberry sauce

Instructions

  1. In a medium bowl, mix together shredded cheese, mayonnaise, and chopped sage until well combined.
  2. Spread the cheese mixture evenly over each tortilla. On one half of each tortilla, layer slices of turkey, stuffing, and spoonfuls of cranberry sauce. Fold the other side over to enclose the filling.
  3. For the dipping sauce, combine whole berry cranberry sauce with mayonnaise and chopped sage in a separate bowl; mix until smooth.
  4. Heat a skillet over medium heat and cook two folded quesadillas at a time for about one to two minutes per side until golden brown. Repeat with remaining quesadillas.
  5. Cut each quesadilla in half before serving with the creamy dipping sauce.
