  • 1/3 cup grated mozzarella cheese

  • 1/2 teaspoon oregano
  • 2 tablespoons green onions (finely chopped)

  1. Peel and grate the sweet potato. Rinse under cold water until clear to remove excess starch. Squeeze out moisture using cheesecloth or paper towels.
  2. In a bowl, whisk the egg and mix in chopped green onions. Combine this with the shredded sweet potatoes.
  3. Add salt, pepper, onion powder, oregano, and flour; mix until fully combined.
  4. Heat oil in a skillet over medium heat. Drop spoonfuls of the mixture into the skillet, flattening them slightly.
  5. Fry each side for about 3-4 minutes until golden brown and cooked through.
