Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing on low speed. Incorporate the vanilla extract and mashed sweet potatoes until well blended.
