  • 2 medium butternut squash
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • Salt and black pepper, to taste
  • 2 cups cooked chicken, shredded
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup chicken broth or stock
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Fresh parsley, chopped
  • Drizzle of honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brush the cut sides of halved butternut squash with olive oil, drizzle with honey and sprinkle with cinnamon, salt, and pepper.
  3. Place them cut side down on a baking sheet and roast for 30-40 minutes until tender.
  4. In a skillet, sauté diced onion in olive oil until translucent; add minced garlic.
  5. Mix in shredded chicken and chicken broth; heat through before adding Parmesan cheese and optional cranberries or nuts.
  6. Scoop some flesh from the roasted squash into the filling, then fill each half generously.
  7. Return filled squash to the oven and bake for an additional 15 minutes.
