  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream, room temperature
  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 1/2 cup powdered Swerve Sweetener
  • 4 large egg yolks
  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix almond flour, cocoa powder, powdered Swerve Sweetener, and salt. Stir in melted butter and water until crumbly. Press into a 9×13 inch baking dish and bake for 10 minutes; cool completely.
  2. Blend softened cream cheese with powdered Swerve Sweetener until smooth. Add vanilla extract and heavy whipping cream; mix well. Spread over the cooled crust.
  3. Heat unsweetened almond milk with powdered Swerve in a saucepan until dissolved. Whisk egg yolks in a bowl, then gradually add warm milk mixture while whisking. Return to heat, add xanthan gum and cocoa powder; stir until thickened. Remove from heat, stir in butter until melted, then cool before spreading over the cheesecake layer.
  4. Beat chilled heavy whipping cream with powdered Swerve and vanilla until stiff peaks form; spread over the pudding layer. Top with cocoa powder and sugar-free dark chocolate shavings.
