  • 1 batch cilantro lime rice or Vegan Mexican Rice
  • 1 can black beans
  • 1 avocado
  • 1 red pepper
  • 1 orange pepper
  • 1 block extra firm tofu
  • 2 tablespoons sriracha
  • 1 tablespoon olive oil
  • 3 tablespoons corn starch or arrowroot starch
  • 12 teaspoons coconut sugar or brown sugar
  • 1 teaspoon paprika
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/21 teaspoon salt
  • 1 batch spicy tahini dressing

Instructions

  1. Preheat the oven to 400°F.
  2. Press the tofu to remove excess moisture for about 5–10 minutes.
  3. Mix coconut sugar, corn starch, and spices in a bowl.
  4. Cut tofu into cubes and combine with sriracha and olive oil.
  5. Coat tofu with spice mixture.
  6. Spread tofu on a parchment-lined baking sheet and arrange chopped peppers alongside it.
  7. Bake for 20 minutes, then brush remaining sriracha mixture onto the tofu and bake for another 10–15 minutes until crispy.
  8. Assemble bowls with rice at the base followed by beans, roasted peppers, baked tofu, sliced avocado, and optional spicy tahini dressing.
