  • 1 pound large raw shrimp (peeled and deveined)
  • 4 garlic cloves (minced)
  • 5 ounces baby spinach
  • ½ cup low sodium vegetable broth
  • 3 tablespoons salted butter
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the spaghetti squash into 1-2 inch rings and roast for 30-40 minutes until tender.
