  • 4 pounds spaghetti squash
  • 2 egg yolks
  • 2 eggs
  • 4 oz finely grated Parmesan cheese
  • 12 oz chopped turkey bacon
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (204°C). Optionally line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise, scoop out seeds, and place cut-side down on the baking sheet. Bake until fork-tender (30-45 minutes).
  3. Once cooled slightly, shred the squash into strands using a fork.
  4. In a medium bowl, whisk together room temperature eggs, yolks, and Parmesan until smooth.
  5. In a skillet over medium heat, cook turkey bacon until crispy (5-7 minutes), then add garlic and sauté until fragrant.
  6. Toss in shredded squash and kosher salt until heated through.
  7. Off heat, slowly combine with the egg mixture using tongs to create a creamy sauce.
  8. Serve garnished with parsley and additional Parmesan if desired.
