  • ¾ cup + 2 tablespoons very warm water
  • 2 tablespoons oil (canola, vegetable, or olive oil)

Instructions

  1. Mix dry ingredients: In a stand mixer or large bowl, combine gluten-free flour, psyllium husk, salt, and baking powder on low speed until blended.
  2. Add wet ingredients: Gradually pour in very warm water and oil while mixing until a dough forms.
  3. Rest the dough: Shape into a ball, cover with plastic wrap, and let it sit for 10 minutes.
  4. Divide the dough: Split into six equal balls and keep covered.
  5. Roll out tortillas: On parchment paper, flatten each ball into a circle approximately 6 ½ inches in diameter.
  6. Cook tortillas: Heat a nonstick skillet over medium-high heat; cook each tortilla for about 45 seconds per side until light brown spots appear.
  7. Keep warm or cool down: Wrap cooked tortillas in a towel if serving immediately; otherwise, place on a cooling rack.
