  • 4 large russet potatoes
  • ¾ cup sour cream
  • 1 lb. ground beef
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 2 cups mixed frozen vegetables
  • 2 cups shredded cheddar cheese
  • ¾ teaspoon salt
  • 3 tablespoons salted butter
  • ¼ cup flour
  • ¾ teaspoon Italian seasoning
  • ½ teaspoon mustard powder
  • ¼ teaspoon ground sage
  • Salt and pepper, to taste

Instructions

  1. Boil water in a large pot. Peel and chop the russet potatoes into small chunks, add to boiling water with salt, and cook until tender (about 15 minutes). Drain and return to pot.
  2. Mash the potatoes with sour cream and butter until creamy; set aside.
  3. In another pot over medium heat, brown the ground beef. Drain excess fat if needed.
  4. Sauté diced onion and minced garlic with the beef until onions are translucent (about 5 minutes).
  5. Stir in flour, then gradually add chicken broth while stirring continuously. Incorporate Italian seasoning, mustard powder, ground sage, salt, pepper, half-and-half, shredded cheese, and mixed vegetables.
  6. Gently fold in prepared mashed potatoes until well combined.
  7. Simmer on low for about 10 minutes until heated through.
