  • 1/3 cup almond meal
  • 1/3 cup chopped parsley
  • 1 small onion, finely chopped
  • 1 egg
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 16 ounces mushrooms, sliced
  • 2 tablespoons butter
  • 1 cup yellow onion, sliced ¼ inch thick
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons fresh chopped parsley
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, almond meal, chopped parsley, onion, egg, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning until well mixed.
  3. Form the mixture into meatballs using a scoop and place them on the prepared baking sheet. Bake for 15-20 minutes until they reach an internal temperature of 165°F (75°C).
  4. While meatballs bake, heat olive oil in a skillet over high heat. Sauté mushrooms until golden brown; remove from skillet.
  5. In the same skillet, melt butter and sauté onions until softened. Add garlic and cook for another minute.
  6. Combine the sautéed vegetables with beef broth, parsley, balsamic vinegar, Italian seasoning, salt, and pepper in the skillet. Simmer for about 5 minutes to thicken.
  7. Add baked meatballs to the sauce and cook together for an additional 5 minutes before serving.
