  • 2 tsp ground flaxseed
  • 5 oz coconut milk (room temperature)
  • 2 oz melted coconut oil
  • 16 oz all-purpose flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 ½ tsp quick-rise yeast
  • olive oil (for frying)

Instructions

  1. In a mixing bowl, combine aquafaba, ground flaxseed, water, coconut milk, and melted coconut oil. Whisk until smooth.
  2. In another bowl, mix flour, sugar, salt, and quick-rise yeast; stir until evenly distributed.
  3. Gradually add wet mixture to dry ingredients and mix until a soft dough forms.
  4. Knead on a floured surface until smooth. Place in a greased bowl, cover with a cloth, and let rise for about 90 minutes or until doubled in size.
  5. Roll out dough to about ½ inch thick and cut out shapes using a doughnut cutter.
  6. Heat olive oil in a deep fryer or large pot over medium heat and fry the doughnuts until golden brown on both sides.
