  • 16 oz dry orzo
  • 2 cups cooked chicken (diced)
  • 3 cups chicken stock (unsalted)
  • 1 cup heavy cream
  • 5 garlic cloves (minced)
  • 1 cup grated parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups baby spinach (chopped)
  • 1 pint cherry tomatoes
  • Juice of 1/2 lemon
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook orzo in boiling salted water until al dente; drain and set aside.
  3. In a large oven-safe skillet, sauté minced garlic in medium heat until fragrant. Add chicken stock and bring to a simmer.
  4. Stir in heavy cream, Italian seasoning, salt, and pepper.
  5. Combine cooked chicken, drained orzo, spinach, tomatoes, lemon juice, parmesan cheese, and half the mozzarella into the skillet; mix well.
  6. Top with remaining mozzarella and bake for 25–30 minutes until bubbly and golden brown.
  7. Let cool slightly before serving.
