  • 5 Tbsp salted butter (melted)
  • 8 oz cream cheese (room temperature)
  • ¾ cup plain 0% Greek yogurt (room temperature)
  • ⅓ cup granulated sugar
  • 1 egg + 1 yolk
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • 1 Tbsp arrowroot starch or cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with 12 liners.
  2. In a food processor, crush the graham crackers into fine crumbs, then mix in melted butter.
  3. Divide the crust mixture among the muffin liners and press down firmly.
  4. Bake the crust for 5-6 minutes, then let cool.
  5. In a mixing bowl, beat cream cheese until smooth; add Greek yogurt, egg, sugar, vanilla extract, lemon juice, and arrowroot starch—mix until just combined.
  6. Pour the filling evenly over the cooled crusts and bake for 17-20 minutes until set.
  7. Cool at room temperature for about 30 minutes before chilling in the refrigerator for at least 3 hours.
  8. Serve chilled topped with fresh berries or a drizzle of honey.
