  • ¼ teaspoon oregano
  • ¼ teaspoon paprika

  • ½ cup vegetable broth
  • 1 (15 oz) can white beans (drained and rinsed)
  • ¼ cup sun-dried tomatoes (sliced)
  • ½ cup heavy cream (plus more as needed)
  • ¼ cup fresh basil (chopped)

Instructions

  1. In a large skillet over medium heat, sauté minced onion in oil until softened. Add garlic and cook for another 30 seconds.
  2. Stir in tomato paste, salt, oregano, paprika, and red pepper flakes. Cook for about 2 minutes until well combined.
  3. Add vegetable broth, white beans, and sun-dried tomatoes to the skillet. Cook for an additional 4-5 minutes, stirring occasionally.
  4. Lower the heat and mix in spinach and heavy cream. Continue cooking until spinach has wilted.
  5. Garnish with fresh basil before serving warm with toasted bread.
