  • 1 cup long grain white rice (basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth)
  • Zest of 1 lemon
  • Juice of 1 lemon (23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add the diced onion and sauté for 2–3 minutes until translucent. Stir in minced garlic and cook for another 30 seconds.
  2. Add rice to the pot, stirring to coat it with oil and aromatics. Toast for about 1 minute.
  3. Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes until liquid is absorbed.
  4. Remove from heat and let sit covered for an additional 5 minutes. Fluff rice with a fork before serving and garnish with parsley if desired.
