Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup milk (or substitute)
  • ⅓ cup melted butter (or oil)
  • Zest of 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon lemon zest (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan thoroughly to prevent sticking.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, milk, melted butter, lemon zest, and lemon juice until well combined.
  4. Pour the wet mixture into the dry ingredients. Gently fold until just combined; be careful not to overmix.
  5. Using a piping bag or spoon, fill each cavity of the donut pan about ⅔ full with batter.
  6. Bake in the preheated oven for 10–12 minutes or until lightly golden brown; a toothpick inserted should come out clean.
  7. While the donuts bake, mix together the granulated sugar and lemon zest for the coating.
  8. Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack.
  9. Once cool enough to handle, roll each donut in the prepared lemon sugar coating until well covered.
