  • 4 cups shredded zucchini
  • 1/2 cup diced yellow onion
  • 2 tbsp minced garlic
  • 2 eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup grated Parmesan cheese (divided)
  • 1/2 cup crushed pork rinds or Parmesan crisps
  • 3 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C) and spray an 8” x 8” baking dish with non-stick spray.
  2. Drain shredded zucchini using a cheesecloth to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini, onion, garlic, eggs, mozzarella, cheddar, and half the Parmesan.
  4. Transfer mixture to the baking dish and bake for 20 minutes.
  5. In a small saucepan, melt butter and mix with crushed pork rinds and remaining Parmesan.
  6. Top casserole with the mixture and bake for an additional 5-8 minutes until golden brown.
  7. Serve warm and enjoy!
