  • 1/4 cup coconut flour
  • 4 oz cream cheese (softened)
  • 3 large eggs
  • 1/4 cup butter (melted)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup powdered sweetener (erythritol or monk fruit)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a medium bowl, mix almond flour, coconut flour, baking powder, baking soda, salt, and powdered sweetener.
  3. In a large bowl, beat the softened cream cheese until smooth. Add eggs one at a time, mixing well. Stir in melted butter, heavy cream, lemon zest, lemon juice, and vanilla until combined.
  4. Gradually add dry ingredients to wet ingredients and mix gently until just combined.
  5. Fill muffin cups about 3/4 full and bake for 18-22 minutes until golden brown. Cool in the tin for 10 minutes before transferring to a wire rack.
