  • 2 pounds large shrimp (peeled, deveined, tails removed)
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped)
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crushed beef rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium-high heat, heat olive oil and season shrimp with salt and pepper. Sear for 1–2 minutes per side until pink. Remove from skillet.
  3. In the same skillet, melt butter and sauté onion until soft. Add garlic, basil, and nutmeg; cook for another 30 seconds.
  4. Pour in heavy cream and simmer until slightly thickened. Stir in half of the parmesan and all Monterey Jack cheese until smooth.
  5. Place shrimp in the baking dish, pour the creamy sauce over them, then add the topping of the remaining parmesan mixed with crushed beef rinds.
  6. Bake for about 25 minutes until golden brown and bubbly.
