  • 2 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp xanthan gum (optional)
  • ¼ tsp sea salt
  • 2 large eggs
  • ⅓ cup full-fat sour cream
  • 3 tbsp melted butter
  • ¾ cup shredded cheddar cheese
  • 2 tbsp melted butter (for topping)
  • ½ tsp garlic powder (for topping)
  • ½ tbsp parsley (finely chopped)

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a muffin pan.
  2. In a bowl, whisk together almond flour, baking powder, garlic powder, xanthan gum (if using), and sea salt.
  3. In another bowl, mix eggs, sour cream, and melted butter until smooth.
  4. Combine wet and dry ingredients until you have a thick batter; fold in shredded cheddar cheese.
  5. Scoop about 3 tbsp of the mixture into each muffin cup.
  6. Bake for 18-22 minutes until golden brown; a toothpick inserted should come out clean.
  7. While warm, brush tops with melted garlic butter mixed with parsley.
