  • 3 large Egg Yolks
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vanilla Extract
  • 1 1/2 tsp Banana Extract
  • High-Key vanilla wafers (garnish)
  • Whipped Cream (garnish)

Instructions

  1. Heat heavy whipping cream in a saucepan over medium-low heat until steaming but not boiling.
  2. Remove from heat and cool until comfortable to touch.
  3. In a mixing bowl, whisk egg yolks and gradually add warm cream while whisking to temper.
  4. Return to low heat, pouring in the egg mixture while whisking continuously.
  5. Stir in Swerve until fully combined.
  6. Simmer on low heat, stirring often until thickened to pudding consistency.
  7. Stir in vanilla and banana extracts before cooling for about 5 minutes.
  8. Cover with plastic wrap pressed against the surface to prevent film formation.
  9. Chill in the refrigerator for 2-3 hours before serving.
