  • 1 pound Ground Beef (lean)
  • 16 ounces Italian Sausage (chicken or turkey, casings removed)
  • 8 ounces Baby Bella Mushrooms (diced)
  • 2 Garlic cloves (minced)
  • 1 Zucchini (cut through the length and then in 1-inch slices)
  • 1/2 Red Bell Pepper (seeded and diced)
  • 1 tbsp Italian Seasoning
  • 32 ounces Beef Broth
  • 15 ounces Diced Tomatoes In Juice (1 can)
  • 6 ounces Tomato Paste (1 can)
  • 3 cups Kale (coarsely chopped)
  • 4 ounces Cream Cheese (1/2 package, softened to room temperature)
  • 1/4 cup Heavy Cream

Instructions

  1. Brown the ground beef and Italian sausage in a skillet or using the sauté function of your Instant Pot. Drain excess fat.
  2. In the Instant Pot, combine browned meats with mushrooms, garlic, zucchini, bell pepper, Italian seasoning, and beef broth. Stir well.
  3. Layer diced tomatoes and tomato paste on top without stirring.
  4. Secure the lid, set the valve to sealing, and cook on pressure cook/manual for 15 minutes. Perform a quick release after cooking.
  5. Once done, stir in softened cream cheese until melted, then add kale and heavy cream until combined.
