  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley

Instructions

  1. Sear seasoned chicken in a large skillet over medium heat until golden brown. Remove and set aside.
  2. Toast the rice in the same skillet for 1-2 minutes. Add chicken broth, BBQ sauce, and honey; stir well.
  3. Return the chicken to the skillet, cover, and simmer for 15 minutes.
  4. Add mixed vegetables on top; cover and cook for an additional 5 minutes until everything is cooked through.
  5. Let sit for 5 minutes before fluffing with a fork and garnishing.
