  • 45 medium organic russet potatoes, peeled and cubed
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 4 cups organic vegetable stock/broth
  • 1 cup organic heavy cream
  • 12 cups freshly grated sharp cheddar cheese

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes then cutting them into cubes. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil and butter until melted. Sauté the onion until translucent (3-5 minutes) then add minced garlic for another minute.
  3. Stir in the On Everything All-Purpose Blend and smoked paprika briefly before adding cubed potatoes.
  4. Pour in vegetable stock or broth along with apple vinegar; bring to a boil then reduce to simmer for about 20 minutes until potatoes are tender.
  5. Blend the soup until smooth using an immersion blender or a regular blender in batches.
  6. Return to low heat; stir in heavy cream and grated cheddar cheese until melted. Adjust seasoning if needed.
  7. Serve warm topped with chopped kale if desired.
