  • 1 1/4 lbs boneless chicken breasts, diced
  • 2 tablespoons olive oil
  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 1 teaspoon lemon zest
  • 1/3 cup grated Parmesan cheese (or more)
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 3 teaspoons Italian seasoning
  • 1 teaspoon garlic powder

Instructions

  1. Wash all vegetables thoroughly. Dice chicken into small pieces and slice zucchini and yellow squash; set aside.
  2. Heat a large skillet over medium heat with one tablespoon of olive oil and one tablespoon of butter until melted.
  3. Add the chicken, season with salt, pepper, half of the Italian seasoning, and half of the garlic powder; cook for about 5-7 minutes until golden brown.
  4. Incorporate the zucchini and yellow squash into the skillet, along with remaining olive oil, butter, seasonings, lemon zest; mix well.
  5. Sauté for another 5-7 minutes until vegetables are tender but vibrant.
  6. Remove from heat; stir in lemon juice, Parmesan cheese, and chopped parsley before serving warm.
