  • 1 lb lean ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups cauliflower florets
  • 1 cup cauliflower rice
  • ½ cup carrot (sliced)
  • 1 cup celery (sliced)
  • 1 cup green beans
  • 14 oz canned diced tomatoes (with juices)
  • 6 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef with chopped onion and minced garlic until no pink remains. Drain any excess fat.
  2. Add cauliflower florets, cauliflower rice, sliced carrots, sliced celery, green beans, canned tomatoes with juices, beef broth, Italian seasoning, salt, and pepper into the pot.
  3. Bring the mixture to a boil over medium-high heat, then reduce to low heat and let it simmer for about 15 minutes until vegetables are tender.
