  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey; cook until browned (5-6 minutes), breaking it apart as it cooks.
  4. Stir in diced tomatoes, Italian herbs, salt, and black pepper; simmer for 3-4 minutes.
  5. Layer half of the zucchini slices in the prepared baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat the layers.
  6. Bake uncovered for 30-35 minutes until edges are bubbling and cheese is golden. Let cool for about 5 minutes before serving.
