  • 275 g gluten free plain flour
  • 125 g cold unsalted butter or dairy-free butter
  • 1 tsp xanthan gum
  • Pinch of salt
  • 50 g light brown sugar
  • 1 large egg (beaten)
  • 12 tbsp cold water

Instructions

  1. Cut the cold butter into small cubes and place in a bowl.
  2. Sieve gluten-free flour into the bowl and rub together until it resembles breadcrumbs.
  3. Add xanthan gum, brown sugar, and salt; whisk to combine.
  4. Incorporate the beaten egg gradually using an electric mixer or fork.
  5. Slowly add cold water until you achieve a slightly sticky dough consistency.
  6. Form into a ball, wrap in cling film, and chill in the fridge for 30 minutes.
  7. Preheat oven to 180°C (350°F).
  8. Roll out dough on a floured surface until about 3-5mm thick; fit into pie tin.
  9. Prick the base with a fork and blind bake with baking beans for approximately 15 minutes.
