  • 4 tbsp powdered sugar (30g)
  • 1/4 tsp baking powder
  • 1/4 tsp xanthan gum (omit if your flour blend contains gum)
  • 2 oz chocolate (50g)

Instructions

  1. Preheat oven to 350ºF and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat dairy-free margarine and powdered sugar together until fluffy.
  3. Add gluten-free flour, baking powder, and xanthan gum; mix until a smooth dough forms.
  4. Transfer the dough into a piping bag and pipe three-inch cookie fingers onto the prepared baking sheet.
  5. Bake for 10-15 minutes until pale golden. Watch closely to avoid burning.
  6. Let cool briefly before transferring cookies to a wire rack.
  7. Melt chocolate and dip both ends of each cookie; allow to set on the rack.
