  • 100 grams light brown sugar
  • 115 grams granulated white sugar
  • 1 large egg
  • 1 egg yolk
  • 425 grams mixed chocolate
  • 150 grams toasted pecans

Instructions

  1. Preheat oven to 375°F (190°C). Line a cookie sheet with parchment paper.
  2. In a bowl, mix gluten-free flour, cornstarch, baking powder, and baking soda.
  3. In a stand mixer, cream together butter, sugars, vanilla extract, and salt until fluffy.
  4. Add eggs one at a time until fully incorporated.

  6. Portion dough into 6oz balls and refrigerate for 12 hours.
  7. Arrange dough on the cookie sheet and bake for 10 minutes; rotate and bake for an additional 6-9 minutes until edges are crispy.
