  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar (for filling)
  • 1 1/2 tablespoons ground cinnamon
  • 6 ounces cream cheese (for frosting)
  • 1/3 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1/8 teaspoon salt (for frosting)
  • 5 tablespoons milk (for frosting)

Instructions

  1. In a mixing bowl, combine warm milk and granulated sugar. Sprinkle yeast over top and let sit for 5 minutes until frothy.
  2. Add melted butter, eggs, apple cider vinegar, gluten-free flour blend, baking powder, and salt. Mix using a stand mixer until well combined.
  3. Cover the bowl with a damp cloth and let rise in a warm place for about 30-45 minutes or until doubled in size.
  4. Prepare the filling by mixing softened butter with brown sugar and ground cinnamon until smooth.
  5. Roll out the dough into a rectangle about ½ inch thick on a floured surface. Spread the filling mixture evenly over the dough.
  6. Roll tightly into a log shape and slice into even pieces about 1-2 inches thick. Place on a lined baking sheet.
  7. Cover again and allow to rise for another 20-30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for about 15-20 minutes until golden brown.
  9. For the frosting, beat together softened cream cheese and butter until creamy; gradually add powdered sugar while mixing along with vanilla extract and salt.
