  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (for filling, softened)
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, mix flour, ginger, cinnamon, baking soda, salt, and spices. In another bowl, cream together softened butter, brown sugar, granulated sugar, molasses, vanilla extract, and egg until smooth. Gradually combine dry ingredients and stir in rolled oats.
  3. Drop tablespoon-sized dough onto prepared sheets; bake for 9 minutes until lightly browned around the edges. Cool completely on wire racks.
  4. For the cream filling, beat softened butter and cream cheese until smooth; gradually add powdered sugar and mix in vanilla extract and salt. Adjust consistency with whipping cream if needed.
  5. Spread or pipe filling onto half the cookies; top with remaining cookies to create sandwiches.
