  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 6 cloves garlic
  • 4 ounces cream cheese
  • 1 cup plain Greek yogurt
  • 1 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each spaghetti squash in half lengthwise, scoop out seeds, and brush with olive oil and seasonings.
  3. Place cut-side down on a baking sheet and roast for 30–35 minutes until tender.
  4. In a skillet, cook cubed chicken until golden brown; set aside.
  5. Sauté diced onion and minced garlic in the same skillet until fragrant.
  6. Add spinach and cook until wilted, then stir in chicken broth.
  7. Mix in cream cheese, Greek yogurt, parmesan, thyme, and red pepper flakes; combine well.
  8. Return chicken to the skillet and simmer briefly before mixing with spaghetti strands from the squash.
