  • 2 ¾ pounds (about 5 large) Golden Delicious apples (peeled and cut into ½" cubes)
  • 1 Golden Delicious apple (peeled and grated)
  • 2 tablespoons unsalted butter (melted)
  • ¾ + ⅓ cup gluten-free old-fashioned rolled oats (divided)
  • ⅓ cup all-purpose gluten-free flour
  • ⅓ cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons water
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter (softened and cut into 8 pieces)
  • ⅓ cup chopped nuts (pecans, walnuts, or almonds) (optional)
  • Caramel ice cream topping (for serving) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine sugar, brown sugar, water, lemon juice, cornstarch, vanilla extract, ground cinnamon, nutmeg, and salt. Toss in the cubed apples until well-coated before transferring to a baking dish.
  3. In another bowl, blend melted butter, oats, flour, brown sugar, vanilla extract, water, and salt until crumbly. Add optional nuts if desired.
  4. Spread the topping over the apple mixture evenly. Bake for about 60 minutes until golden brown and bubbly.
  5. Let cool slightly before serving.
