  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup sliced green onions
  • 2 cups canned coconut milk
  • 3 tablespoons corn starch
  • 2 pounds tater tots (gluten-free)
  • 7 ounces dairy-free cheese

Instructions

  1. Heat olive oil in a large skillet over medium-low heat.
  2. Add chopped zucchini, mushrooms, bell pepper, and creole seasoning. Cook for about 10 minutes until softened.
  3. Preheat your oven to 400°F.
  4. Add ground beef along with garlic powder, onion powder, and black pepper to the skillet. Cook until browned, about 10 minutes.
  5. Whisk cornstarch into coconut milk and pour into the mixture. Stir until thickened.
  6. Pour the mixture into a glass baking dish, sprinkle with dairy-free cheese, and top with tater tots.
  7. Bake for 25-30 minutes until golden brown.
