  • 2 pounds peeled and deveined shrimp
  • 1 English cucumber, diced
  • 3 green onions, sliced
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 lime
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • Salt to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, and salt; mix well.
  2. Boil water in a pot over medium-high heat. Add shrimp and cook for 2 to 3 minutes until pink and opaque.
  3. Prepare an ice water bath in a large bowl. Transfer cooked shrimp to the ice bath using a skimmer for about 3 minutes.
  4. Drain shrimp in a colander and chop into bite-sized pieces.
  5. In a large mixing bowl, combine chopped shrimp with diced cucumber, green onions, and prepared dressing. Stir gently until well-coated.
