  • 1/3 cup plant-based milk
  • 1/3 cup all-purpose flour (or gluten-free)
  • 1 cup panko breadcrumbs
  • 1 cup buffalo sauce
  • Corn tortillas

Instructions

  1. Preheat the oven to 450°F.
  2. Pat the tofu dry, press if necessary, and tear into bite-sized chunks.
  3. In a bowl, mix the milk, flour, granulated garlic, paprika, salt, and black pepper until smooth.
  4. Coat the tofu chunks in the batter, then toss with panko breadcrumbs until evenly coated.
  5. Spread on a baking sheet and spray with cooking spray; bake for 15-20 minutes, flipping halfway.
  6. Toss baked tofu in buffalo sauce.
  7. Warm tortillas over flame or in a pan; assemble by adding guacamole and crispy tofu.
