  • 19 oz can black beans
  • 1/2 cup salsa
  • 1 tbsp taco seasoning
  • 1 tbsp chipotle pepper in adobo sauce
  • 1/2 tsp garlic powder
  • 1/21 tsp salt (to taste)
  • 1 tbsp olive oil
  • tortillas (corn or flour)
  • dairy-free cheese (optional)
  • cilantro or parsley, chopped
  • green onions, sliced (optional)
  • diced tomatoes or pico de gallo
  • avocado slices or guacamole
  • non-dairy sour cream
  • pickled red onions
  • creamy cole slaw
  • romaine lettuce ribbons
  • dipping sauces (see post for ideas)

Instructions

  1. Preheat the oven to 450ΒΊ F.
  2. Drain and rinse the black beans.
  3. In a food processor, blend black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until mixed (chunky if desired). Stir in cilantro or parsley.
  4. Heat olive oil in a skillet over medium-high heat. Add sliced green onions and cook until fragrant. Add the bean mixture; cook for about 5 minutes, flipping for texture.
  5. Fill each tortilla with several tablespoons of filling and fold.
  6. Brush tortillas with oil and place on an oiled baking sheet. Bake for 6–8 minutes, flip gently, then bake another 6–8 minutes until golden and crispy.
  7. Prepare toppings while tacos bake. Serve immediately.
