  • 4 chicken thighs (boneless, skinless)
  • Salt and black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs for 2–3 minutes per side and season with salt and pepper. Remove and set aside.
  2. In the same skillet, sauté minced garlic and sun-dried tomatoes until fragrant (about 2–3 minutes).
  3. Add chicken stock and heavy cream; stir in grated Parmesan cheese and whisk in cornstarch until smooth.
  4. Return the chicken to the skillet, cover, and cook on low heat for 15–20 minutes until fully cooked.
  5. Stir in fresh basil before serving warm with sauce.
