  • ¼ cup all-purpose flour
  • ¾ cup water
  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoon unsalted butter (room temperature)
  • 5 tablespoon unsalted butter (room temperature)
  • 2/3 cup dark brown sugar
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules
  • 2 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tbsp heavy cream
  • ¾ tsp instant coffee granules

Instructions

  1. Prepare the tangzhong by mixing water and flour in a saucepan over medium heat until it thickens. Set aside.
  2. In a stand mixer bowl, combine all-purpose flour, sugar, yeast, and salt.
  3. Warm the milk slightly and dissolve instant coffee in it; add to dry ingredients along with the egg, vanilla extract, and tangzhong.
  4. Knead until smooth and elastic, then let rise in a warm place until doubled in size.
  5. Roll out dough into a rectangle and spread filling made from butter, brown sugar, cinnamon, and coffee.
  6. Cut into strips and roll into rolls; allow to rise again before baking at 325°F for 20–23 minutes.
  7. For frosting, blend cream cheese with softened butter and powdered sugar; add heavy cream and coffee until smooth.
  8. Frost warm rolls generously before serving.
