  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup shredded zucchini
  • 1 cup chocolate frosting

Instructions

  1. Preheat oven to 350°F (180°C) and grease two 8-inch cake pans.
  2. Mix milk and vinegar in a bowl; let sit for 5 minutes to curdle.
  3. In a large bowl, combine oat flour, cocoa powder, arrowroot powder, baking soda, and baking powder.
  4. In another bowl, whisk together the curdled milk mixture, brown sugar, and applesauce until smooth.
  5. Combine wet and dry ingredients gently and fold in shredded zucchini.
  6. Divide batter between prepared pans and bake for 35–40 minutes or until a skewer comes out clean.
